White Pizza Sauce Recipe (Creamy, Garlicky, 10 Minutes)

Last Update: September 30, 2026 · Sophia Cucina · Leave a Comment

This white pizza sauce recipe gives you a silky, garlicky, parmesan-rich base that puts jarred versions to shame — and it comes together in about ten minutes on the stovetop. It’s the same creamy, dreamy sauce you’d find on a classic white pie, built with a quick roux, plenty of garlic, and real cheese.

I started making this at home after one too many takeout white pizzas where the sauce tasted like bland mayo. Once you nail the roux-to-milk ratio and hit it with fresh garlic and good parmesan, there’s no going back.

Use it on homemade dough, flatbreads, or even as a dip. It’s forgiving, versatile, and honestly a little dangerous to keep around.

What Is White Pizza Sauce?

White pizza sauce is a creamy, dairy-based alternative to traditional tomato sauce. Instead of crushed tomatoes and herbs, you’re working with butter, garlic, flour, milk, and cheese — essentially a quick béchamel amped up with parmesan and seasonings.

It’s the backbone of a classic white pie (pizza bianca), which originated in Naples and skips the tomato entirely. The sauce is mellow, rich, and lets toppings like ricotta, spinach, or sausage really shine without competing with acidic tomato.

If you’ve only ever had white pizza from a chain, homemade is a revelation. The sauce is softer, fresher, and you control the garlic intensity.

Why This White Pizza Sauce Recipe Works

The trick is building flavor in layers. You’re not just melting cheese into milk — you’re toasting garlic in butter, cooking out the flour so there’s no raw-paste taste, and whisking in warm milk gradually so the sauce stays smooth.

Using a mix of parmesan and a little mozzarella gives you sharpness and stretch. Parmesan alone can get grainy; mozzarella alone is too mild. Together, they mimic what good pizzerias do.

This recipe also scales easily. Double it for a crowd or halve it for a single pizza night. And because it’s a stovetop sauce, you don’t need to wait — it’s ready to spread the moment it thickens.

Ingredient Notes

Use unsalted butter so you can control the salt level. Garlic should be fresh — pre-minced jarred garlic works in a pinch, but fresh cloves give a sharper, cleaner bite that really matters here.

Whole milk is ideal for richness and thickening. Low-fat milk works but produces a thinner sauce; if you use it, add an extra teaspoon of flour. Skip heavy cream unless you want a very decadent, pourable sauce — it changes the texture.

For cheese, grab a wedge of real Parmigiano-Reggiano and grate it yourself. Pre-shredded parmesan has anti-caking additives that make the sauce gritty. Low-moisture mozzarella (the kind sold in blocks, not fresh balls) melts in smoothly.

Smart Swaps & Dietary Options

Gluten-free: swap the all-purpose flour for a 1:1 gluten-free blend or cornstarch (use half the amount if using cornstarch). The sauce thickens a touch differently but holds up well on pizza.

Vegan/dairy-free: use vegan butter, unsweetened oat or soy milk, and a vegan parmesan-style sprinkle. Nutritional yeast adds cheesy depth if your vegan cheese is bland. The texture won’t be identical, but it’s genuinely good.

Keto: replace the flour with 1 teaspoon of xanthan gum whisked in at the end, and use heavy cream instead of milk. This keeps it low-carb while staying thick and rich.

No mozzarella? Just use all parmesan, or swap in provolone for a similar melt.

Tips for the Best Sauce

Whisk constantly when adding milk to the roux. Lumps form when cold or room-temp milk hits hot flour all at once. Pour slowly and whisk like you mean it.

Don’t let the garlic brown — you want it golden and fragrant, about 30 seconds. Burnt garlic turns bitter and will ruin the whole pot. If you’re worried, pull the pan off the heat for a few seconds.

Add cheese off the heat. If the sauce is boiling when you stir in parmesan, the proteins can seize and turn stringy or grainy. Pull the pan off the burner, then whisk in the cheese until smooth.

Taste before spreading. Salt levels vary wildly between parmesan brands. A quick taste test saves you from an over-salted pizza.

Serving Ideas & Storage

Spread this on pizza dough before baking, leaving a small border for the crust. Top with mozzarella, ricotta dollops, spinach, or grilled chicken. Classic white pie combos: ricotta + garlic + spinach, or sausage + caramelized onions + mozzarella.

Beyond pizza, use it as a dip for breadsticks, a sauce for pasta (thin with pasta water), a spread for paninis, or a base for chicken parmesan flatbreads. It’s basically a quick Alfredo, so anywhere you’d use that, this works.

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stove over low heat, whisking in a splash of milk to loosen it. The sauce thickens as it sits — that’s normal. Freezing works but can make the texture slightly grainy; reheat low and slow with extra milk.

Ingredients Equipment Method Notes

Ingredients

  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 ½ cups whole milk, warmed
  • ⅓ cup grated Parmigiano-Reggiano (about 1 oz)
  • ⅓ cup shredded low-moisture mozzarella (about 1 oz)
  • ½ tsp salt, plus more to taste
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • Pinch of red pepper flakes (optional)

Equipment

  • Small saucepan
  • Whisk
  • cheese grater
  • Measuring spoons

Method

  1. Warm the milk in the microwave or on the stove until it's just steaming — not boiling. Set aside.
  2. Melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook, stirring, until fragrant and light golden, about 30 seconds. Do not let it brown.
  3. Whisk in the flour and cook for 1 minute, stirring constantly, to remove the raw flour taste. The mixture will look like a thick paste.
  4. Slowly pour in the warm milk, about ¼ cup at a time, whisking constantly to prevent lumps. Continue whisking until the sauce is smooth and begins to thicken, about 3–4 minutes.
  5. Remove the pan from the heat. Whisk in the parmesan and mozzarella until fully melted and smooth.
  6. Stir in the salt, pepper, oregano, and red pepper flakes. Taste and adjust salt as needed — parmesan saltiness varies by brand.
  7. Let the sauce cool for a few minutes before spreading on pizza dough. It thickens further as it cools, making it easier to spread without soaking into the crust.

Notes

Store in an airtight container in the refrigerator for up to 4 days. Reheat gently over low heat on the stove, whisking in a splash of milk to restore the creamy texture. Freezing is possible but may cause slight graininess — reheat low and slow with extra milk. This recipe makes enough sauce for one 14-inch pizza or two smaller flatbreads.

Frequently Asked Questions

Is white pizza sauce the same as Alfredo sauce?

They’re very similar — both are butter, garlic, cream or milk, and parmesan. White pizza sauce is typically a bit thicker so it spreads and stays put on dough, while Alfredo is usually thinner and tossed with pasta. You can use this recipe as a quick Alfredo if you thin it with a little pasta water.

Can I make white pizza sauce ahead of time?

Yes. Make it up to 3 days in advance and store it in the fridge in an airtight container. It will thicken as it chills, which is actually great for spreading. Reheat gently on the stove with a splash of milk before using.

Can I use ricotta instead of making a roux-based sauce?

You can, but it’s a different style. Ricotta-based white pizza is more of a spread than a sauce — it doesn’t melt and flow the same way. If you want that classic creamy, pourable white sauce, the roux method is the way to go. You can also dollop ricotta on top of this sauce for the best of both.

Why is my white pizza sauce grainy?

Usually it’s because the cheese was added while the sauce was boiling, or because pre-shredded parmesan was used (it has anti-caking additives). Always add cheese off the heat and grate your own parmesan from a wedge. If it’s already grainy, whisk in a splash of warm milk off the heat to smooth it out.

Can I make this dairy-free or vegan?

Absolutely. Use vegan butter, unsweetened oat or soy milk, and a vegan parmesan-style cheese. Add a teaspoon of nutritional yeast for extra cheesy depth. The texture will be slightly different but still delicious on pizza.
