Sauté Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Add Remaining Ingredients: Add the chokecherry juice (or cranberry juice), ketchup, apple cider vinegar, brown sugar, molasses, smoked paprika, chili powder, and cumin. Stir well to combine.
Simmer: Bring the mixture to a simmer, then reduce heat to low and simmer for 30 minutes, or until the sauce has thickened slightly. Stir occasionally to prevent sticking.
Season: Season with salt, pepper, and cayenne pepper (if using) to taste.
Cool and Store: Let the sauce cool completely before storing in an airtight container in the refrigerator.
