  • ½ cup chopped onion
  • 2 cloves garlic minced
  • 1 cup chokecherry juice or unsweetened cranberry juice
  • ½ cup ketchup
  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon molasses
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper optional, for heat
  • Salt and pepper to taste

Method
 

  1. Sauté Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add Remaining Ingredients: Add the chokecherry juice (or cranberry juice), ketchup, apple cider vinegar, brown sugar, molasses, smoked paprika, chili powder, and cumin. Stir well to combine.
  3. Simmer: Bring the mixture to a simmer, then reduce heat to low and simmer for 30 minutes, or until the sauce has thickened slightly. Stir occasionally to prevent sticking.
  4. Season: Season with salt, pepper, and cayenne pepper (if using) to taste.
  5. Cool and Store: Let the sauce cool completely before storing in an airtight container in the refrigerator.
