- 1 tablespoon olive oil
- ½ cup chopped onion
- 2 cloves garlic minced
- 1 cup chokecherry juice or unsweetened cranberry juice
- ½ cup ketchup
- ¼ cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon molasses
- 1 tablespoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon cayenne pepper optional, for heat
- Salt and pepper to taste
Sauté Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Add Remaining Ingredients: Add the chokecherry juice (or cranberry juice), ketchup, apple cider vinegar, brown sugar, molasses, smoked paprika, chili powder, and cumin. Stir well to combine.
Simmer: Bring the mixture to a simmer, then reduce heat to low and simmer for 30 minutes, or until the sauce has thickened slightly. Stir occasionally to prevent sticking.
Season: Season with salt, pepper, and cayenne pepper (if using) to taste.
Cool and Store: Let the sauce cool completely before storing in an airtight container in the refrigerator.
- Use Good Quality Ingredients: The better the ingredients, the better the flavor of the sauce.
- Adjust the Sweetness and Heat: Adjust the amount of brown sugar and cayenne pepper to your liking.
- Simmer Slowly: Simmering the sauce slowly allows the flavors to meld and deepen.
- Let It Cool Completely: This will allow the sauce to thicken properly.
