Ingredients
  

  • 2 slices of your favorite bread sourdough, brioche, whole wheat
  • 1 egg
  • 50 g grated cheese cheddar, mozzarella, Gruyère, pepper jack
  • 4 bacon rashers cooked
  • 1 Tbsp butter unsalted

Instructions
 

  • Prep the bread: Remove the center of one slice of bread with a cookie cutter or knife, creating a hole. Butter one side of each slice of bread.
  • Toast the base: Place the buttered side of the bread with the hole down in a hot frying pan over medium heat. Cook until golden brown and crispy – about 2-3 minutes.
  • Crack the egg: Flip the bread and crack one egg into the hole. Cook for 1-2 minutes, or until the egg white is set but the yolk is still runny.
  • Assemble the Breakfast Grilled Cheese: Top with grated cheese, cooked bacon, and the other slice of buttered bread (buttered side up).
  • Grill to perfection: Flip the sandwich and grill until golden brown on the underside and the cheese is melted and gooey – another 2-3 minutes.
