  • Corn: 1 ½ cups frozen or fresh. Sweet corn is KEY
  • Red Bell Pepper: 1 medium, diced
  • Red Onion: ½ medium, diced
  • Cilantro: ½ cup chopped, essential!
  • Lime Vinaigrette:
    • Olive Oil: ¼ cup
    • Lime Juice: 2 tablespoons
